Veggie Cheese Ball


With the hotter weather, all I feel like doing is snacking on food like this cheese ball. A friend gave me this recipe years ago and it continues to be a yummy way to sneak in some extra raw vegetables!

1 cup shredded carrot
1 cup diced broccoli
4 oz. shredded Cheddar cheese
8 oz cream cheese
1 tsp diced onion

Mix all together. Form into a ball. Refrigerate. Enjoy!

  3. I made this right after I saw the recipe. I used a zucchini, diced small, instead of the broccoli and onion powder to not have a strong onion 'crunch'. It was a big hit! Thanks for a quick and yummy recipe!

  5. I really like cheese balls & this sounds really good & healthy. Do you know how many it serves? I'm having company on Sunday & thought I'd make this. It'll 6 adults & 4 children. Thanks, Charlene Heisey

    I really don't know how many this would serve. Guess it would depend upon how hungry your guests were and what else you were serving. But I think one batch would be enough for your guests.

  7. The Cheese ball sounds good for snacking. I might substitute finely chopped green pepper or fresh parsley
    for the broccoli. Years ago we would fill celery cavities with a cream cheese mixture and then slice into bite size pieces for a veggie platter.
    Or you could make into a ball as suggested and roll into finely chopped nuts. Another idea for presentation you can place the cheese ball into the center of a pretty glass plate and arrange a variety of crackers around the ball, I make sure knives for spreading are near by and cocktail size napkins available.
